Instant Pot Macaroni and Cheese

This easy Instant Pot macaroni and cheese is the ultimate vegetarian comfort food for busy weeknights. By cooking the pasta directly in the broth, every elbow is infused with savoury flavour, resulting in a rich and velvety sauce without the need for a traditional roux. A touch of yellow mustard and a pinch of cayenne pepper cut through the richness of the cheese, providing a subtle depth that makes this homemade version far superior to any shop-bought alternative.

Perfect for a quick family lunch or a satisfying midweek supper, this one-pot method significantly reduces the washing up. The combination of sharp Cheddar and salty Parmesan creates a sophisticated flavour profile that appeals to both children and adults. Serve it alongside a fresh green salad or some steamed broccoli for a balanced, heart-warming meal that is ready in less than twenty minutes.
