This classic iceberg salad with Italian dressing is the ultimate refreshing side dish, offering a wonderful play on textures and bold, Mediterranean flavours. The crisp, cool leaves of the iceberg lettuce provide a perfect base for the creamy mozzarella balls and the sharp, salty punch of provolone piccante. A homemade vinaigrette, enriched with a touch of mayonnaise and fragrant dried oregano, ties everything together for a restaurant-style finish.
As a versatile vegetarian dish, this salad works brilliantly alongside grilled meats or as a light lunch on its own. The addition of tangy peperoncini and thinly sliced red onions adds a pleasant heat and crunch, making it a sophisticated step up from a basic green salad. It is an easy, healthy way to bring vibrant colour and zest to your dinner table any night of the week.
