This heirloom tomato salad with feta dressing is a celebration of summer produce at its finest. By using a variety of heritage tomatoes, you create a dish with a complex balance of sweetness and acidity, complemented by the creamy texture of ripe avocado. The vibrant colours make it a stunning centrepiece for any table, while the addition of dried oregano and red wine vinegar provides a classic Mediterranean flavour profile.
As a refreshing vegetarian dish, this salad is perfect for light lunches or as a sophisticated side for a weekend barbecue. The creamy feta dressing adds a savoury depth that ties the fresh ingredients together beautifully. How to make Heirloom Tomato Salad with Feta Dressing
Back to contentsSlice the larger tomatoes into thick slices and halve or quarter the smaller ones. Place them on a serving plate, alternating colour and sizes, and sprinkle with the salt and pepper.
To make the dressing, in a large bowl, whisk together half of the feta with the olive oil, vinegar, garlic and oregano until just combined. Season to taste with salt and pepper. Set aside.
Peel and slice the avocado, reserving some for garnish, and place it on top of the tomato. Pour the dressing over the salad and top with the reserved avocado and onion. Sprinkle the remaining feta on top and serve.
