Oregano-Marinated Tomato Salad

This vibrant oregano-marinated tomato salad celebrates the peak of the season, making use of multi-coloured heirloom tomatoes for a beautiful visual impact. By allowing the tomatoes to sit with fresh oregano and high-quality extra-virgin olive oil, they release their natural juices to create a rich, fragrant dressing that requires very little effort. It is a simple yet sophisticated way to showcase fresh produce at its finest.

As a naturally vegan dish, this salad is an excellent choice for a light summer lunch or as a refreshing side for grilled vegetables and crusty sourdough bread. The combination of salt and acidity draws out a deep, savoury sweetness from the fruit, making it a reliable staple for outdoor dining and garden gatherings throughout the warmer months.
