Pasta with Pistachio Pesto

This vibrant pistachio pesto pasta offers a sophisticated twist on the traditional basil-based sauce. By using roasted pistachios and fresh mint, the dish gains an earthy depth balanced by the brightness of chopped tomatoes. It is a wonderfully textured, savoury vegetarian meal that feels much more indulgent than its simple preparation suggests, making it a brilliant choice for a quick midweek dinner or a relaxed weekend lunch with friends.

As a versatile vegetarian main, this recipe relies on high-quality ingredients to shine. The addition of a little starchy pasta water is the secret to achieving a silky, glossy coating that clings perfectly to every strand. Any leftover pesto keeps well in the fridge and makes a fantastic Mediterranean-style spread for crusty sourdough or a flavourful topping for grilled vegetables the following day.
