30g plain flour
2 tablespoons grated Parmesan
1/2 teaspoons kosher salt
325g fresh corn kernels
1 thinly sliced spring onion
1/2 finely chopped seeded jalapeño

How to make Corn-Jalapeño Fritters
Back to contentsPulse 2 beaten large eggs, 30g plain flour, 2 tablespoons grated Parmesan, and 1/2 teaspoons kosher salt in a food processor to combine. Add 325g fresh corn kernels, 1 thinly sliced spring onion, and 1/2 finely chopped seeded jalapeño; pulse 2–3 times.
