These homemade maple and andouille-style sausages offer a sophisticated twist on the classic breakfast patty. Combining the smoky, fiery heat of Cajun-inspired spices with the mellow sweetness of pure maple syrup, they provide a balanced flavour profile that elevates any morning meal. This high-protein dish is a fantastic alternative to shop-bought sausages, allowing you to control the quality of the meat and the intensity of the seasoning.
Ideal for a weekend brunch or a nutritious meal prep option, these patties pair perfectly with poached eggs or wholemeal toast. While they are best enjoyed fresh from the frying pan, you can prepare the patties a day in advance and keep them in the fridge behind cling film. They are an excellent choice for those seeking a satisfying, savoury start to the day that is packed with natural protein.

How to make Maple Andouille Breakfast Sausage
Back to contentsWhisk paprika, garlic, salt, black pepper, cayenne, thyme, and red pepper flakes in a large bowl. Add pork and maple syrup. Using your hands, combine well.
Form 16 (2"-wide) patties about 1/2" thick with damp hands and arrange on a large parchment-lined rimmed baking sheet.
Heat 1 tablespoon oil in a large cast-iron or nonstick skillet over medium. Cook patties in batches, adding remaining 1 tablespoon oil to skillet between batches, until golden brown and cooked through, about 2 minutes per side. Drain on paper towels.
Uncooked patties can be formed 1 day ahead; wrap in plastic and chill. Patties can be cooked 30 minutes ahead; keep warm in a low oven.
